I can't do baguettes.
Either its I've never had a good one in the US...or something.
They are always too 'dense' and outside too much crunch for my like. All the ones I have tried in the US, even at 'fancy' French restaurants here have the texture and chewability of the outside edge of pizza crust. You can't bite through it without some effort, and more bite down most the way and rip/tear a piece off with your teeth than bite through it.

From your description I can somehow imagine this actually being good, but it will never not remind me of a week in a german hospital with a broken leg.
