This was a question already posed before among scientists, the ending theory was that because our eyes see beyond points of light and can adjust to spaces in a void, we would still be able to see things.
For example, say looking up at the night sky and seeing stars which are millions of miles away, you don't actually see space, you see the stars. Though I imagine if you're going at such a rapid speed all you'll see is real blurrs, but, scientists have been known to be wrong/right before.
