Try Taking 1 stick out and see if it will run at full speed. I know some mobos require you to turn down the clock speed when you have more ram.
Also, how about you send me your old baby.

it says 7900gt is dx10 compatible if I'm not mistaken.

It could very well be that MSI has tweaked the bios to support DDR2-800, but officially the 975X doesn't support it. The 975X Platinum from MSI doesn't support DDR2-800 but according to the MSI website your board should, maybe the MSI tweak isn't working with your set of ram. I would try to return the board and get a p965 board instead.
