For all around mouse, I'd recommend the MX Revolution or MX 1000 mice. All of Logitech's desktops are great too.

Also just wondering, if I change the logitech mouse from the S510 pack to another logitech mouse that uses RF as well, will it still pick it up on the same USB RF Transmitter / receiver thing or will I need 2 of them plugged into the USB ?

Bluetooth is worse for that I think.
Your problem is interference because I've used older Logitech wireless mice from across the room. Try eliminating any sources of interference, it might be wires for example. They just have to be positioned differently not removed completely.
*note, this was a problem with the earlier mice, with the G7 I don't have this problem anymore - or at least it isn't interfering in a way that I notice.

Have you tried with just the mouse plugged in, maybe the other devices are the interference?
