You shoudl visit ann franks house. Eat dinner somewere, then go to paradiso and party. Next day go to maddam tussauds, after that go shopping with your gf, she will love it. Finish with a romantic dinner. Next day eat lunch in the vondelpark.

I'm not sure about boats, but flight tickets start at about £60 return, per person. Just Google flight tickets.
Rooms in the city centre start at 40-50 Euros per person per night. Weekends are probably cheapest and easier to get accomodation.
If you're going for two or three days, get the earliest flight you can get (5:30, 6:00 am or something), and arrive in time for breakfast. Then sort out a place to stay before you get too wasted. You're looking at around 35-50 Euro's per person night in the city centre. Drop off your luggage and hit the city.
You'll also need about 3 or 4 Euros (in change, preferably) to get a train directly from the Airport (Schiphol) to the city. Its about a five minute journey. Or don't get a ticket, but if you get caught the fines are pretty steep (50-80 Euros, on the spot).
And travel LIGHT. One small rucksack should easily hold enough for a few days.
And have a great time there. TBH, it'd be hard not to.

Amsterdam is great. At my first visit, we went to Sex Museum or something like that. Some wierd stuff there lol.
