You can't have multiple accounts on a PSP (contrary to PS3).
When you accept you will only be able to play the activated content from, say, your JP Store ID.
When you want to go back to playing your US Store content you just activate content from that account again.
You switch back and forth between your accounts and linked content. Just leave all the content on your PS3 for easy switching.
You won't lose anything by accepting, only the ability to access content from another PSN account - PSN Store on your PSP.

So if I have a game I bought from the UK PSN store (Gran Turismo), and I want to play a Japanese demo, if I activate that Japanese demo I will no longer be able to play Gran Turismo - is that right? But I'd be able to play it if I switch back? Would I need to use the PS3 for that or will the PSP on its own suffice - what's the process?... and will this affect the number of activations/downloads available for the games I buy off PSN?

PSP suffices but you can keep your stuff centralised on your PS3 if you have the HDD space. As far as I know this does not affect activations and/or downloads.

I was a little fuzzy on the activation process, but looks like it doesn't have any long-term negative side effects so panic averted. And no, I don't have space on PS3 (though I keep meaning to upgrade) but I've noticed I can copy stuff to the PC using the MediaGo application, so hopefully that works instead.
Logging into the PlayStation account management website (which I only noticed existed through MediaGo) it doesn't show a limit on how many times you can download an application. So I do wonder whether there actually is one or not. Either way they should be clearer about these things because I'm sure I've read that you can only download an application 5 times or something like that. There's no documentation with the PSP explaining any of this
