I havent played these for years, cause of my location there are no arcades and many games dont even get imported.
I kind of stopped playing them in the killer instinct days, so i know i got almost 15 years of fighting games to catch up to, i need some help making a list of games worth playing, hopefully you can help.
here is a little list i made till now
Killer instinct 1/2 arcade versions through mame
Street fighter 2 anniversary edition through mame
Street fighter 3 third strike through mame
Fist of the north star PS2
BlazBlue 2 Continuum Shift PC rip
Guilty Gear XX accent Core Plus on PS 2
Garou: Mark of the Wolves Neo geo
So besides the above which i assume are the best in their series i got the following
Marvel vs capcom 1 or 2 ? and are the playstation versions decent ports?
king of fighters dont know which ones to pick
street fighter 4 any good?
super street fighter 2 HD same as above
and are there any that i forgot? thanks

Street Fighter 4 is good, and if you have a console, you should definitely give Super Street Fighter 4 a try. It's really a 2D fighter in a 3D world.
You may also want to give Tatsunoko vs. Capcom a try on the Wii or with emulator on PC.

Do NOT touch the PS1 versions of *any* VS series title. They're severely gimped in that you can't actually swap characters mid-fight, unless you choose the mirror mode where the opponent has the same characters. Get them on MAME or, preferably, KAWAKS. Xmen vs SF, Marvel vs SF and Marvel vs Capcom are all available in KAWAKS or MAME, with Marvel vs Capcom 2 being on Dreamcast emulation; NullDC or Makaron. I'm not sure if the Naomi drivers for MAME are playable, so if you want the arcade version of MvC2, get Makaron-NAOMI version.
King of Fighters? Not really my area, those are more my brother's favourites and he swears by KoF 2001 .. or the cross-over; SNK vs Capcom/SNK vs Capcom Chaos/SNK vs Capcom 2. All playable via KAWAKS/MAME.
Street Fighter IV is absolutely BLINDINGLY awesome. One of the most amazingly polished fighters in recent memory, tweaked and balanced like a finely honed katana..... EXCEPT for AI-controlled Seth and any decent human-played Sagat. They balanced it a lot more in Super Street Fighter IV, but sadly no PC release
SSF2THDR is BLEH with a capital BLEH. Really didn't like it, the balance and "feel" is waaaaaaay off Capcom standards.
Another series of over-the-top yet amazingly fun 2D fighters would be the "Darkstalkers/Vampire/Vampire Hunter" ones. Especially Darkstalkers 3 (Vampire Saviour) Playable via KAWAKS/MAME.
For the lesser known 2D fighters, check out "Cyberbots Full Metal Madness" - it's insane tons of fun and is the 2D fighter version of the Final Fight-esque "Armoured Warriors" Again, KAWAKS or MAME.

so all those vs games are each good on their own? or is the marvel vs capcom 2 one the best of them all ?

They're all great in their own right, though I consider MvC2 and XvSF the best of the bunch ... closely followed by MvC and Tatsunoko vs Capcom. On the other side of the fence, the SNK vs Capcom games are brilliant too.
