Good games to learn PC gaming and shit? What should we play? Getting a second PC together tomorrows so we can start playing together.

Instead of path of exile I'd go for diablo 3. It's more noob friendly.

Divinity - Original Sin for a long rpg you can cooperate in, arguments between your characters are sorted out by agreeing or disagreeing and having a rock paper scissors minigame. It's overall enjoyable playing together, fun and easy to focus on. Fully recommended.
Divinity - Original Sin 2 is for when you want to split up. There is a lot of freedom, a lot more options and a lot less guidance from the game. This supports up to 4 people in coop but even if it's just two people it can easily create conflicts and fights, can be very frustrating to play depending on your nature. It's very easy to miss crucial story points and lose track of what's going on or the other person ruining your plan, your game, your decisions, your fun.
From the first few hours the game clearly points out that only one can win and continuously creates situations to turn you against other players. You can unlock from the group and do your own thing too. I started this game 3 times, with a full team of 4...3...and finally with only one other person and we finished the game but it was very frustrating cause it's so easy to undermine others or get left out of story if you're interested in it. It's not cooperation, it's backstabbing. A great game but in a different way and I do not recommended starting with this one if you actually want to play and experience something as a positive team together.

Don't limit yourself to PC though, consoles (you can emulate them on PC) have tons of great co-op games as well. Just figure out what genres she likes and explore those further.

Cannot go wrong with Until Dawn and quantic dream adventure games like Heavy rain, Detroit and so on.
I've also played Resident Evil 7 with my fiancee and The Last of Us.
She is not much of a gamer though and prefers to backseat if the game is interesting. With games like Until Dawn, she can make choices too

Depending on if you want to play co-operative or competitive I suppose. Don't know how common this sort of 2-player mode is these days though, used to be frequent in strategy and grand strategy but internet and broadband likely moved a lot of it to online play instead.
...I just killed someones relationship didn't I? End-game for some of these can be quite aggressive so co-operative might be best.
Board games, party games or similar also works though it entirely depends on what genres you are looking for and style of gameplay.
(Also boards games can get really serious too ha ha, to say nothing o the casual family friendly party games that exist.)
