I'd suggest VirtualDub, plain and simple, none of the bloated interfaces. Here you set a video source, select a proper codec and it records. Usually for recording video, it is best to use a quick lossless video codec (like HuffYUV or ffv1) because they are very easy on the processor, and after recording the show you are interested in, then cut it and encode it properly with H264, which takes a lot more time.

Thanks. Virtualdub seems to do the trick - last version I checked I had one hell of a hassle to get it up and running.
Now I just need to figure out why it's dropping frames like crazy :/

How do you have it set up? Install the latest build of ffdshow tryouts to have the proper codecs. Then remember before each capture to set the appropriate codec.

I don't think it's related to that because not just the captured video is fubar even the preview runs like ass.
Gotta think about that for a minute or two...

Ok, I'm sure it's not related to the source either.
Tried my VCR, my PS2 and my Wii. All the same.

When you are not capturing, does the preview appear fine?
Also, the source of your video does not matter, as at the end it is all converted from analog to digital. We just have to find the source of the slowdown.
Try going to the device settings in VDub and checking if the correct settings are selected. Maybe it is set on a low framerate, so you are getting "jumpy" video. Set it to 25 or 30. (You probably need 25 as you are from Europe.)

Was set to 27 just fiddled around with it a bit but no luck.
And no, even the preview doesn't look fine (skippy as hell - as in more frames dropped than actually shown skippy).
edit:
I know it works on my laptop since I used it (before I switched to Windows 7) to record some VHS my father wanted to keep with it - but I used Pinnacle Studio back then.

Have you tried in other software?
This is strange, as VDub uses Windows drivers and API to get the video input.

I would have used Pinnacle Studio again (though it sucks major balls) but it crashes on startup.

Windows tells me the device works properly and yes I grabbed the latest drivers I could find at the pinnacle website so I figure everything's good on that front.

I guess vdub can't handle the output from the Dazzle.
I used to own an Hauppauge PVR 350 and vdub (or vlc) didn't like that one either but at least hauppauge's recording software worked.

Seems to work now for the most part (mind you I changed absolutely nothing).
Getting some random frame drop spikes and the preview seems to lag behind quite a bit when I let him playback the audio but I'll work out the kinks.
Thanks again Leo for suggesting virtual dub and helping me out

Just tried another software.
Debut Video Capture. Preview runs nice at 30fps but as soon as hit record it lags behind like nobody's business. Drops a couple of frames here and there but overall seem quite good.
Oh. and apparently it does not like to record audio.
So, let the search continue!

was fed up with shit and grabbed pinnacle studio 14.
Not even that manages to grab a decent, non stuttering video from either my ps2, wii or VCR.
Either Win 7 really hates my Dazzle, my Dazzle is borken or I don't know what else. :/

A Pentium 2 actually.
It's my Laptop, it's got a Intel Core 2 Duo T8100 @2,10GHz
But like I said before I switched to Win 7 and Pinnacle Studio 10 no longer ran it handled capturing shit nicely

14 doesn't crash. 10 did.
But 14 gives me crappy output as well :/

Gave it another thought, in order for programs like vdub to fully function with your device, the driver needs to support DirectShow capturing for both audio and video.
Since you get a video preview in vdub that part is supported at least.
When you start recording in preferably PS 14 did you check the CPU usage with the task manager?
Another possible bottleneck: very full and fragmented HDD
Maybe this tool can help:
