Anything from FF, really. There's a ton of great soundtracks I love, especially classics like Descent (Allister Brimble is a GOD) or even C64/Miggy tracks, but if/when someone asks me straight out "What's your favourite?" I always think "Final Fantasy" IV, V, VI, VII, VIII, IX, X, XIII... the music is sublime.
fallout 1&2 soundtrack, hands down
planescape torment (also mark morgan like fallout 1&2 - oh, and he's coming back for new vegas \o/)

splinter cell soundtracks have some great beats
always liked the instrumental fear factory tracks on the original carmageddon soundtrack (why do 99% of metal bands ruin their stuff with fuck-awful vocals?)

Holy hell, I didn't think anyone besides me and my brother ever played The Last V8. Who could forget that horribly awesome scratchy synth voice, "V8, return to base. Immediately!"
