We are in PC section so only for games that are available on PC.
I would make Top 3-10 with max 2 bosses from one game!

I have never been amazed by any bossfight in a game. They always feel like shitty closing chapters after a great experience.

I found the boss fights in The Witcher II to be produced quite good but executed a bit poorly I did not play the Enhanced version though Apart from that almost all fights in Dark Souls

I'm with Mister_s on this one... I don't really like bossfights. I prefer when a fight with an important character is handled like a fight with any other character and not be something amazingly special just because he's a "boss". That's what I liked about the first Deus Ex for example. It's why the fights in HR were disappointing for me, besides the fact that they were just that, fights... you couldn't progress in any other way. The one in the DLC was cool though, because it was handled like in the first game.
Severance had some bossfights that I liked I guess, but the reason I liked them was because there weren't really any bosses in that game. Pretty much each fight in that game feels like a big fight, which is why there are no bosses really, because the fights with the more special enemies aren't so out of the ordinary. And I loved that.

I don't know if you should call it a bossfight, but a dialoge discussion where you can archive something (sometimes instead of fighting) is generally great for me.
So something like Planescape: Torment, Fallpout 1&2 or the dialoge-fights in Human Revolution were great.
For traditional boss fights there are great fights in MGS 1, 2 and 3. I didn't like 4 that much.

Most recent ones would be:
1. Ornstein and Smough in Dark Souls: epic!
2. The final boss in Remember Me, wasn't anything mind blowing gameplay wise, but story wise and the final scene it was just beautiful.
From older games or classics:
- Darth Malak in KOTOR1.
- Tsar Runner in Binary Domain.
- Mother (final boss in Prey).
Those are the ones that came to mind first. I will update when I recall others.

almost destroyed my PS3 gamepad because of them. I've tried to kill them for hours...and hours. It was so fucking satisfying to finish them off.

dark souls is the only game i can think of recently with good boss fights. the movie for the start of the sif fight is one of my favorite boss moments ever.

Pretty much every Raid-Boss in classic World of Warcraft. Nothing beats defeating a boss for the first time with 40 people cheering on Teamspeak.

Anything from Dark Souls like it's been said, easily the most interesting and challenging aspect of the game. I'd add the Metal Gear Solid series and Shadow of the Colossus too (they all work fine on PC with the mighty emulator).
But also Firkraag and Kangaxx from BG2, Hitler from Wolfenstein 3D, Darth Malak from Kotor, Baal from Diablo 2: LoD, Neverwinter Night's 2 final battle, and many others that I can't remember
