Dark Souls, even though it's coming to PC you should at least try it out.
As for "only on consoles" games you should play: Tales of Vesperia, Eternal Sonata, Fez, Spelunky, Shadow Complex, Castlevania - Lords of Shadow, Crackdown 1, Bayoneta, Vanquish, Brutal Legend... that's of the top of my head for now.

Blue Dragon is an underrated gem as well, it was mostly panned due to the "childlike" nature of the game, but in end it's an excellent jRPG from the heavy-hitting talent that made every FF title up to and including FFX. I would recommend it to anyone =)

the same also goes for eternal sonata, which has (or had at least then) also simply marvellous cellshading gfx and a deep storyline

metal gear solid HD collection
these are all must plays and probably the best games out on 360 tbqh, they all have good length also unlike the majority of titles

Well, there been a bunch of good games, like dmc4, castevania, batman, but very few REALLY good games.
I just started up red dead redemption again, which i remember being good, but had some flaws, like picking flowers, etc. But this might be one of the few really good games. The setting is pretty much spot on.

DS series is definitely the most stand out game this generation and a absolute must play, other than those games there's really not to many i'd put under the category of incredible... a couple are good but the majority are average/decent
it's a pretty shitty generation
