Most games nowadays are overhyped, of course you don't want to release a demo and get ridiculed. They are also mostly crappy ports or otherwise buggy as fuck, so a demo version would just dissuade potential customers.
And finally most games are rushed, they don't even devote enogh time to playtest them, they're not going to make a fucking demo, no time.

Several years ago I was editing the bonus DVD which was included with a local computer magazine, it became a huge problem to actually find some demos to fill a DVD9 disc. So at some point I had to start improvising (including Linux distribution ISOs, free MMO clients, old game demos "for younger gamers who missed the classics", yeah, lol). Luckily they dropped the dvd at some point, partially to cut the expenses and partially because it lost its purpose in broadband era, but the point is, this issue with demos is definitely not new.

DEMO?
What is this thing called a demo in todays gaming industry?
Noone really do release demos anymore. Most games are just broken or really terrible that when you do play the demo you will avoid it. They rather take your 60€ upfront and when you do start complaining that the game is bad or not working then they do not give a damn because they already have your money. Better for business but worse for the consumer.
OR they ask money even for the demo. Metal Gear Solid V: Ground Zeroes anyone? 40€ for a demo. Sure in this case the game was good but asking that amount of money for content that is the size of a demo is absurd from the consumer perspective.
