The following command more or less solved it, I should have read the previous posts a bit better, hehe.
For simplicty just place dv2_pak.exe in C:\ and create a new folder, let's call it "Empty" to follow the example of the person who posted the tutorial on how to pack it.
In this folder place the unpacked Sound and Win32 data after naming it properly and then from the commadn prompt enter the following command while being in C:\
dv2_pak.exe -a Empty\ Dialogs.dv2

Thanks you JB! Your latest method finally worked! Now I have to do a defragmentation after so many copy/paste and pack/unpack operations:)
ASRock B450 Pro4 || Ryzen 7 3700X || Patriot Viper 16Gb DDR4-3600 || ASUS GeForce RTX 3080 TUF GAMING || XPG GAMMIX S11 Pro 1Tb || Xiaomi Mi Surface Display 34" (3440x1440)

Well, I'll use the first part of the post from xentax forum, some text of my own and a little part of JB's post.
1) Unpack Dialogs.dv2 with the unpacker by dragging the .dv2 file on dv2_u.exe
2) Add a copy for each ...German.dialog file with English(US) instead of German in Win32\Characters\Dialogs\ folder, so the Dialogs folder contents will be:
A_AD_Deodatus.dialog
A_AD_DeodatusEnglish(US).dialog
A_AD_DeodatusGerman.dialog
and so on.
2.1) Renaming will be easier with this program.
2.2) You can also skip the part where you need to manually create copies by downloading this archive(200mb), extracting it, placing the extracted files in Dialogs folder and then replacing "English" in the filenames with "English(US)" using the utility above.
3) Make a copy of Sound\Soundbanks\Win32\German\ folder and change its name to English(US), thus having two different folders with the same contents.
4) Place the packer(dv2_pak.exe) in the root folder of any local partition. For example, E:\
5) Create a folder of any name on this partition(for example, E:\Empty) and place the Win32 and Sound folders in this newly created folder.
6) Run the Command Prompt and type:
E:
7) After that, without closing the commant prompt, type:
dv2_pak.exe -a Empty\ Dialogs.dv2
8] Go to game_folder\data\win32\packed, rename the original Dialogs.dv2 and place here the new Dialogs.dv2 you created.
9) In the registry (Start - Run - Regedit) go to this location. [HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\Larian Studios\Divinity2]
(The WoW6432Node is only for 64-bit OS's, ignore it if you don't have such a OS.)
Change the language tag to "English(US)"

God I wish I had waypoints for some of these quests, I seem to stumble on a quest trying to find another, only annoying part so far...

Without going through the entire set of posts again I have the game running fine with English text and am currently near RHODE [sp] talking to a ancient TREE alchemist, what exactly will renaming all the files do for me?

Ashmolly, just hit 'M' buddy, it brings up all the quest locations and you can even stick in your own custom waypoint, zoom in and out as required to get a look at the bigger picture....
Get to it.

finally another RPG where you actually have to read quest texts/listen to NPCs and figure things out on your own, I love it.
I'm very happy that they didn't go the oblivion route on this.

I had a similar experience where I left the valley and entered a nearby area (Orobas Fjords.) got my ass kicked by enemies far above my own levels.
Mini-spoiler related to a item.
Spoiler: |
Rushed past most of them and found a dungeon, after a bit of saving/loading due to the enemies in there I found a rather weird sight and a item known only as the "chicken rune", need to find a use for it now |
Edited: added perhaps unneeded spoiler ~Epsilon
