1. Mafia (prolly the most immersive ever for me)
2. Max Payne (his trippin' dreams were... breathtaking)
3. Deus Ex (no explanation needed I thnk)
4. Thief (look above)
5. Prince of Persia: Sands of Time (the narration really helped it)
spykes can u tell what big mod u used and if its the first stalker or clear sky?
edit: ill just go ahead and dl clear sky then
There's 2 big mods I've used so far, I started with the complete 2009 mod which was superb, lost my saves due to reinstall of windows and now im using lurk. They both try to do the same thing only 2009 does it better. LURK boasts how it doesn't want to touch original gameplay yadda yadda yadda but guess what it..it does, they tampered with fun side quests to get ghosts healing armor, they tampered with the quest of getting the super awesome shock sniper rifle, originally took down the mini map only to restore it later, visual wise I still believe 2009 looks better. The only thing I like about LURK is the additional weapons like the scoped G36 <3

Stalker is indeed good in a nighttime storm. But... ( long train of thought incoming )
It's very rare that a game makes me want to get out of the rain and inside the comfort of a shelter. The game obviously can't make me feel the discomfort of a cold rain hitting my face in rough winds, but the devs should figure out ways to make the character emote the discomfort.
In stalker, for instance, they could use blurred vision, slowed down movement speed, hampered aiming etc. Have the character get soaked wet, maybe have him shiver in cold. Just generally make the environment have more than a visual effect. Make it get progressively worse the longer you are out in bad weather. Make the player worry about the game character in other ways than just avoiding getting shot or eaten. Make him get hungry, catch a cold, develop trenchfoot, get food poisoning. Make him wipe his running nose or if it's hot, the sweat on his forehead.
Make that campfire in a makeshift shelter actually count and don't make it a magical meter that slowly runs out and becomes full after 5 seconds of warmth. Make the player actually rest at such a shelter, provide some other entertainment such as other people taking shelter to whom the player can talk to around the campfire while warming up.
In short, make the game character believably react to the weather and environment. Make it clear to the player his character isn't feeling ok.
Only game I can think of that even put an effort into this is Cryostasis.
I dunno if such a thing would be so great in a video game, it'd be too much like the sims with guns, have you getting affected during rain will only annoy most players to where they just immediately find shelter and kepe sleeping till their in a weather condition they like.
I believe stalker has it good as it is right now, when it's dark it's dark and you have to be careful where you step. When it's raning....it's RAINING, therefore it takes away your ability to hear what's around you, espeially with the use of silenced weapons as it is.
Food, it's already there, if you sleep too long/too much without eating here and there you die.

MDK
Woah, someone remembers this game as well! <3 One of the best action games made.

I have to say my 2nd most immersive game woulda been Baldur's Gate II. Walking through teh dungeons at first wasn't over exciting, ya it was cool read through old books and shit, hearing the sounds, but then you get ouside to waukeen's promenade and the sounds and visuals blast you away. The sounds of the people talking, footsteps from the soldiers clanking in their suits of armor, the dogs barking for attention. Then off to the docks where beggers are begging for food and spare coin, douchebaggery amongst the theives and those trying to skimp them.

Yeah, I bought them both too, but for some reason I didn't like the second that much (perhaps because it wasn't as good? ). Was trying to amuse way too much and failing miserably, while the first was oozing with dark humor.
That was an amazing game evne walking through the towns with the grim attitudes of you being an outsider (dun dun duuuuuunnn) , up till the part where you're sleeping in that motel and have to start running away from those bullies. Never had I been so pissed off to where I was going to smack an elderly woman across the jaw with my keyboard

All brings a smile to my face.
i liked BG II but BG, BG TotSC made more impression
it was a long road to the city Baldur but when in a new world developed, bustling streets, lotsa side quests, nasty sewers and not to forget the very creepy end game
(Sarevok: Killing is our father's work; embrace it as I have!)
Mafia, Stalker, Deus Ex, Max Payne, Operation Flashpoint, Grim Fandango, Monkey Island, Thief...hopefully there are lots of atmospheric games in the gaming history
Outcast (one of best, and also most underrated games of all times)
Thief 1-2
System Shock 1-2
Deus Ex
Grim Fandango (and every other Tim Schafer's game)
Mafia
Anachronox
Undying - This game creeped the shit out of me.. two words: foggy cave
Gothic 1+2 - German RPGs at it's best
Half-Life (1) + Addons - Oh damn, still my alltime favorite FPS. Kudos to the one free man.
AvP 1+2 - Both rocked my socks off as marine
World of Warcraft (Vanilla) - The first time up to lvl60 was fucking awesome for an Warcraft lore fan like me ("Burning Cruturd" and "Wanking of the Lich King" sucked major balls!)
The Witcher - Great game and story
Baldurs Gate II was probably the most immersive game for me at the time. It also was one of the few games I actually bought.
Also both Diablo and Diablo II have been pretty immersive for me, the first time I played through them. I still recall the music as one of my favourites.
Then of course, pretty much all Lucas Arts Games, where The Dig and Grim Fandango probably are on the top of my list, concerning immersion. And then there is The longest journey, only the first part though, as the second one was a little girlish.
But the List would actually become quite long.
Gothic II
Deus Ex
Morrowind
Half-Life
Unreal (jeah, the first Unreal game was really really immersive, sadly the sequel was total crap, crap that I spent money on )
And pretty much everything that has already been posted here.
