Audio in MKV releases is actually not that HD at all, it is usually either AC3 or DTS. From time to time you can find some AAC tracks, but these are rare.
At any rate, the program you what you want is "eac3to" and some GUI for it (you can Google for those).
Use tsMuxer to demux the audio track from the MKV file, and then use eac3to to convert the track to the format you want.

Couldnt be easy could it. I will just convert it to vob then extract the audio from that.

Why would you do that? It is very easy actually.
You drug and drop the file in tsMuxer, go to the "demux" tab, select the checkbox on the audio track only, and give it an output folder. The output of this will be either a .dts file or .ac3. These you can drag-drop to the eac3to GUI app and then select what you want to make out of them (MP3 I assume).
