Eye gouging
Hair pulling
Biting
Fish-hooking
Attacking the groin
Strikes to the back of the head and spinal area (see rabbit punch)
Strikes to, or grabs of the trachea
Small joint manipulation (control of three or more fingers/toes is necessary)
Intentionally throwing your opponent out of the ring/cage
Running out of the ring/cage
Purposely holding the ring ropes or cage fence
Grabbing or putting a hand inside the trunks or gloves of the opponent
Pulling or holding onto an opponent's gloves or trunks

why then does the referee penalise fighters that use the cage for leverage when trying to get out of holds etc

If you want to watch real MMA without the penalization, you should watch Pride, alot less rules than UFC although they have been adjusting a bit since they've gained spotlight. Used to be the only thing you couldn't do was kick your opponent in the head while he was proned. For the cage grabbing i've never questioned that they should be told to release the cage, as they should just be fighting within a ring, not using the limitations of the area (cage) to their advantage, but it can also of course be argued whatever it takes to win.

For an example as to why to not allow it, if it was allowed even just for "leverage" you could pin your foe face first against the cage and wrap your fingers around the cage to ensure you could rape / choke / rape / ballkick / rape / bite / rape / biterape them without any chance of them escaping without breaking your fingers

Yes, I know it's pretty nit-picky but he's not really "Holding the ring ropes or cage fence" is he?
But I guess that depends on how you interpret the rules.
