Jade Empire 2
First JE was a bit shallow but had some really interesting quests (finding a suitable husband for a gangbanger woman lol... , acting in a play)
1 and 2 are still amazing.

Lands of Lore (anyone play this?) the first one. Since I didn't play the other one(s) since I didn't have a cdrom at the time. Actually, can this even be played on today's hardware? I never did finish it. Got stuck or something.
Freelancer and/or Freespace
Ultima (6 or 7 type, please, prefer 6 though) 6 was my first Ultima and that's why it's my fave.
Jedi Knight (re-make the old ones with new graphics ='s win)
For something unique, Everquest 1. I'd love for them to overhaul that whole engine with today's hardware in mind. /Drool.

The new game should of course come in huge box with maps, compendiums and other important stuff.
