"Guitar masturbation" comes to mind when I think of DragonForce. And that's not a compliment. Same as Dream Theater really.
Not sure if "guitar masturbation" is the right term for DT. Jordan Rudess' keybord masturbation is equally prominent, the same goes for the drum masturbation, vocal masturbation - and bass masturbation (although you don't hear it on the albums, you can see it live).

How do you define good taste?
If it is defined by popular opinion, then it is a matter of adhering to social convention and not based in any particular definable characteristics.
Dragonforce is indeed a very good technical band (not the best) but a superb one, and like referred earlier by other members, it is one sort of band most usually appreciated by musicians themselves, people who actually produce music and can perceive the skills in the structure of the song writing process and also the technicality by which it is performed.
That is how you define good taste in music, by considering the excellence in the individual characteristics of a song, such as, harmony, complexity, performance, texture, structure, and so forth, never make the mistake of defining good taste by what other people say, that is usually how you define the absence of taste.
always admired dragonforce for making "happy" tech metal... way different from my normal routines in music.. BUT wtf is up with the same techniques in almost every song, and the solos would absolutely not stand without a keyboard fucking backing up every sweep every arpeggio, mad props to mr. synth... and ffs get a drummer that can do more than boom pop boom pop b-b-boom pop boom pop..
