I recently got myself the Corsair Vengeance 1500 7.1 Headset.
Now this one is USB.
My question is, should i set the settings in games and movieplayers to 7.1 channel or stereo (because it's virtual 7.1 due to USB right?)

If it's virtual than the settings for number of channels don't really matter. Virtual normally means that it creates a 7.1 (in this case) audio from whatever you give to it, be stereo or 5.1. Normally what you get out of it is not worth it, but if that is what you want, you need to specifically enable a virtual surround mode of some kind, either on a player, or on the software that your sound card uses (if such is available).
Edit: I think I was talking about the wrong kind of virtual here... you probably meant virtual surround headphones (as in not having an actual 7.1 system tucked away in there). In this case, everything I said below still applies
Generally speaking, set the movie player settings to output the source audio (you can't get more audio channels than the source has to begin with - vast majority of the time it's 5.1 at most) and enable the virtual surround mode if you want more (or if you can find one).
For games, set the output for whatever your setup supports. If those are 7.1 headphones, set it to 7.1. Most games get the settings from Windows though, so you just need to set your speakers to the 7.1 mode in Windows sound settings.
Actually, that is the only thing you would normally need to do to get everything working like it should, but I am not sure how this works with headphones
Edit2: What I think you should do, is check the speaker mode settings in Windows playback devices options. Set it to 7.1 if available and click on the different speakers to see if there's any difference in how it sounds. If there is, leave it like that.
I assume that if they market them as 7.1 headphones, virtual or not, they should work with 7.1 input to create the surround effect.
