I've got a centOS box from razorservers, I got the basics of what I need up for it..its running my MC server. But my cent OS or *nix knowledge is about as good as your grandma's understanding of running DOS.
I managed to get sql, ftp, McMyAdmin, and all that. Its been up and running for months with random reboots now and then for some MC issues (unrelated to the OS).
Its stable and running great, but me getting all the things installed was "google it, cut.paste steps, hope it works"
Any of the trustworthy old timers here feeling generous and willing to poke around on it, and make sure everything is setup correctly? look for any "why the hell did you install it like that DX?, that's retarded" and maybe help me with some users config?
For example I got this installed to see the info:

but it was totally "follow steps online to get it working..no idea what I was doing but it worked"
Or for example my SQL fusses on login with phpmyadmin with 'Cannot load mcrypt extension. Please check your PHP configuration." it works fine for what i need..so never worried about trying to figure out how to fix that. And i'm launching the MC server as root, since I couldn't figure out how to add a user, with the correct permissions so its not running as the root user. And also I have to login with putty to start mcmyadmin since my startup for it isn't working, and I cant figure out why.

Most CentOS (or any other enterprise linuxes) are very low maintenance, since RPM's do most of the setup work for you. Its when you go another way the rocky road hits.
Did you install your apps through yum or did you go "configure-make-install" on it by yourself?

Kudos then for your first jump into the fray of the Penguins!
Well, the phpMyAdmin warning is nothing serious. So its a non-issue.
As far as I can see the MC server is a java program that you start and you leave it running. You could drop the "screen" entirely and beckground the server using nohup or disown. You should redirect the stdin/stdout/stderr to a file though so you can have a record of what is going on while its running.
Once that works it is no issue to put a small one-line startup script into rc.d to fire up the server on reboot.
Another option is to cron it so if the server crashes it will be automatically restarted.
