After playing both NHL 2006 and NHL2k6, it's truly a freakin toss up. The 2k series had always been a "bit" more sim but this year it tends to swing a little arcadey.
I say grab both, and give em' a shot. I've been playing more NHL 2006 then the 2k6 version, It def. looks better which is more appealing to me. As for gameplay, and everything else...your call really.

So far NHL 2k6 have higher rating than NHL 06 from TeamXbox, Gamespot, and IGN. I've play both, and it seem NHL 2k6 is more friendlier, by that I mean it's easier to score. NHl 06 seem a little harder to score for me. I can score a lot of wrap around in NHL 2k6, but not in NHL 06.

I'd go for NHL2K6 as well, if you have the bandwidth grab them both though as there both pretty good games.
Graphically I would say NHL 06 just edges it alot more detail on the characters and the rink, alot of reflections on the ice and it gets visibly cut up when you skate around on it etc some nice little touches like scoring a goal and knocking the goalies water flask off the net. NHL2K6 has some nice detail in the crowds they bang on the glassboarding and it gives you a good close up of them reacting every time something interesting happens on the ice the skaters jerseys seem to be a little more detailed in NHL2K6 looks like they have bumpmapping on them.
Sonically I perhaps preferred the atmosphere that you get on the ice with NHL2K6 as I mentioned in another thread im really going off the direction that EA is taking with their music selection so for me NHL2K6 in this department.
Presentation wise EA Sports and the 2K series have always had high standards so no surprises that both games score highly and nothing to choose between them.
As for the gameplay both play a very different game the controls are alot heavier in NHL 06 and like Mag2005 said alot harder to score, I did however manage to deke out the goalkeeper a couple of times using the trick stick one time charging in on the net then grinding to a dead stop making the keeper go to ground before gently lifting the puck over him, another time cutting in from the wing and skating across the goal whilst ridicoulously riding my stick like a horse and flicking the puck into the net from behind my skater with the blade tucked in between my legs - Don't know if theres a name for that move but it looked good. The CPU seemed to want to fight alot when I played which is maybe down to the fact that I was playing a little dirty?
In NHL2K6 on default settings thrashed the CPU 7 and 8 goals to nil in most games played with 40-50+ shots on goal, scored a range of goals including a first time long range shot from the blue line, several wrap arounds, dekes and driven shots in all more variation in the type of goals that I scored. The pro control helps alot as well especially when used in situations where the defense is short handed or whenever you have a break on. On the fly coaching is great as well and the games advantage mode based on how the game is playing out plus the enforcers were good additions to the game. An example of the advantage mode would be your team scores a couple of goals then they get a temporary boost in moral much like a team would in real life were the game going their way. Other examples are when you check a player with an "Enforcer" that results in a bonus for the team and a decline in the checked players attributes likewise if you take control of your goalie and make a manual save that gives your team a boost. Some interesting new ideas the majority of which can be disabled if you don't like the sound of them.
Have no idea about the rosters as I don't follow the hockey to the point where I would notice, NHL2K6 in my opinion has the better choice of game modes in my opinion party mode and the skills mode are a great distraction from the main game.
If your a hockey nut get both, if you only have the choice of one get NHL2K6.
