FFS I couldn't resist trying to complete #1 first. Got to chapter 14 but I really hate the gun handling, all of the controls generally (eg moving, jumping), the enemies take 15 shots before dying, it's impossible to aim, the enemies are too hard, RARGH.
Please tell me number 2 improves on all of these points!!!

Worry not, 1st one is definitely most boring of them all. If it annoys you and you wanna finish it first before next chapters simply put in on easy.
So, here I am at chapter 18, just doing some jumping around and stuff and out of nowhere they start to talk about nazis, and I guess they replaced zombies with yetis?

I guess I would be fine with supernatural stuff but the moment you bring Nazis into a story is just becomes MEH. But I guess they were into that stuff destroying/looting cities/temples and what not.
IIRC it's explained later that these "yetis" are not that supernatural.. without spoiling much, you should finish the game first (although the end story is a bit supernatural).
UC3 has zombies too, and this final level of it really sucks (one of the worst)... but that's just the 30min final level, so it's okish.

Aye, I remember that some rooms spawn so many bullet-sponge enemies that you can seriously get bored or annoyed. Unfortunately game consist almost in 100% of that sections of rooms, with little cutscene here and there. 2 and 3 had more developed storytelling and some great set-pieces, peace-changers and other stuff. Either way Uncharted games can be boring at some moments, I would suggest making small break for some other title between 2 and 3 uncharted, just to not get fed up with those games
