I haven't had that happen but I looked it up and it happens on the PS4 version as well so it must be a bug in the game itself, perhaps introduced with one of the later patches?
(Someone said that avoiding getting hit by the poison effect caused it to not crash but it was probably just coincidence though there is another benefit to managing to avoid the poison.)
EDIT: Oh I missed that you meant the "thing" that is the last boss, not the beast creature a bit before that.
(Well "a bit" might sound somewhat short, there's some three or so bosses between that and the last one, perhaps four if you count the smith.)

you got lucky
When I was playing I had to enable\disable physx to avoid 100% guaranteed crashes.

Meh, still not sure it was worth the $9, honestly 
It's like an extended dark souls DLC (but on easy), and some of it still feels clunky as hell.
Enemy variety and attacks are pretty low, level design is mediocre, and it lacks the equipment progression and variety that you have on DS. Also any of their attempt at characters and story is really really weak

I still am somewhat hopeful about that. It's mostly out of curiosity now, but the pirate bear is always waiting patiently 
Who knows, without them nasty dee er ehm's, we may even be able to play it without constant crashes xD
