I'm gonna print that out and learn to play it. It's gonna be awesome. I love that theme

Oh, those Special Editions are just graphical revamps with new artstyle, voice-overs and "remastered" music ( so to speak ), the game remains exactly the same otherwise. You can switch between the new graphics or the old-school ones by pressing a key:
The only feature you're losing out in the process is that the old-school mode doesn't feature the dynamical music system iMUSE which was introduced with Monkey Island 2.
The voice-overs didn't overly convince me but I can't really fault them either, it's probably because I was doing everyone's voices in my head when I first played them - and nothing can beat that !
Oh yeah, you can also play with the gamepad, but I doubt that's what you're looking for.
Overall, they still did a very good job with those Special Editions - could have been much worse considering present-day "Remasters"

I'm actually already in the middle of a slow but steady re-visiting of these classic in their recent remastered form, started some time ago with replaying Grim Fandango, then moved on to Day of the Tentacle and currently re-doing Full Throttle. The modernizations and vectorized art-style are pretty good and faithful all things considered, and the high quality audio is a plus as well.
Still nowhere near the charm of the mighty pixels, but it's possible to activate the classic look from the options so it's all good.
