Finished it last week, did a lot of side stuff as well, played for about 60 hours.
I don't know how to feel about this game, it has some aspects which I enjoyed, but it has some huge flaws.
It certainly is different than anything I've ever played, I enjoyed parts of the gameplay, the cameos and the atmosphere/soundtrack, and the game is incredibly beautiful.
It is incredibly repetitive though and it gets pretty tiring, when you have to do the same thing for 40+ hours (if you want to finish the main story). Also the minute you have the option to get a vehicle or to start building some roads, the fear factor is gone. In the first 10 hours or so I was afraid every time that I'm going to encounter a MULE camp or BT's that will demolish me, but after I started building roads and got some vehicles I was just driving through the map and couldn't care less what was happening around me.
I love Kojima as much as the next guy but ever since MGS4 he is trying way too hard to be different (TM). He goes out of his way to add plot points that just don't make sense only so he can artificially prolong the story. Halfway through the game more stuff are being introduced to you and still have no idea what's going on. There are some chapters that are just there for the sake of content, it's all a big clusterfuck - go over here, now go over there, now go over here again, this time you need to go over there so you can get something that you will need over here, there is literally no story points during these moments, they are there just so they can make the game feel longer. The side missions on the other hand are non-existent, it's literally the same task over and over again.
The ending is shit, it's a 2 hour cutscene that feels underwhelming, the story never officially pick up and there is a lot of wasted potential.
Also I don't know if this is something that you guys experienced, but I got invested into world road-construction, but no one else on my server was building roads, so i just got tired and said fuck it
(I'm not entirely sure if the roads are shared between servers or not, but I was getting a lot of likes for them.)

Roads are semi-shared. Basically if you don't build your own roads the game will slowly start spawning in segments from other players. And if you quickly build them, then your road segments will be spawned into other people's games if they don't bother, and you get likes as they use those roads.
Same with normal structures. Not everything is shared, if all the signs were visible even on a single server, you wouldn't be able to leave any city without walking through dozens of them and there would be hundreds of generators and zip lines littered all over the place.
The game just checks what's lacking in certain areas in your own world and grabs stuff from the server to fill in some gaps.

You need to progress the story too when you see no player built structures around. When you progress they'll suddenly pop up.

Oh yeah, I know that but I never saw any roads. Saw a lot of bridges and other helpful stuff, but never new roads.

Is it worth it without other players' (meaning online) aid? Something about not having enough stairs and buildings and doodads to progress fast enough (and not turning this game a chore?)

The game is amazing but it's online is a must. It's like the whole meaning of it

No it's not, but its definitely convenient having player buildings around to aid you. A nightmarish scenario is having to build everything yourself.

Last I heard the game will just randomly populates your world with buildings if you play offline. I think you'll miss out on signs and you won't find cargo and equipment left in post boxes.
Online is not essential, but gives the playthrough a kind of "lived in" vibe.
And those who are playing for the first time: this is a Kojima game. Gameplay here is more of a distraction between story beats. Sure, it's incredibly satisfying to conquer a particularly nasty piece of (gorgeous) landscape while dodging BTs and mules, but the main attraction here is the same as it is in every Kojima game: the batshit imaginings of his weird AF brain.
