They flood a server with random gibberish that looks legitimate to the software but is spam to a human, the desired result is called 'Bayesian poisoning' where they taint the spam filters so they can no longer tell spam from legit mail.
It's a fairly common problem and most spam filters can adapt to it these days, it may take some human intervention to do so however.

I use thunderbird and you can train it to detect spam messages and have em deleted automatically, I think this was one of the few that got through, also use gmail's spam guard then have it sent to my thunderbird so I dont have to login and all that.

I'm using Spamato on thunderbird and its working great.. before I used it I was getting about 10 to 50 spam messages a day, now that takes care of them and gives me a funny (monty python) SPAAAM message when it does it..
