Was wondering if there is a way to force use of anti-aliasing in old adventure games like Escape from Monkey Island or Grim Fandango?
I've tried having it on in the control panel, but i don't think it does anything

Always worked for me by forcing it in the Drivers... You are selecting Direct3D right? It will only affect the characters and 3D propsm, the backgrounds are prerendered.

I was thinking about re-installing this one (Grim Fandango). How does it look with anti-aliasing on? Better .... or at least good enough to forget it was made back in 1998? What is the maximum resolution you can run it on, if you happen to know that as well?

edit: should I have any problems running it on an AMD 2000+ radeon 8500 LE, win XP?

The gfx with or without aa are still excellent. They have a unique feel to them that will last through the ages.
The resolution is fixed at 640 by 480 but you can hardly tell.
