Does anyone know the version of Street Fighter where the guys are like flyin' through the air whippin' fireballs all over the place in crazy huge combo moves?

Street Fighter 3: Third Strike is the competition standard one, apparently very complex with blocks and counters.

it reminded me of the hacked versions of streetfighter II u'd get in the arcades tho, like the crazy version with the mid-air fireballs etc and the sped up version, so many wasted 20pences lol, bit of a rip off thinking back

You could be thinking of a Street fighter 2 bootleg machine. They were quite common, and did some crazy things.

lol whoa MasterJuba, be right over. 
I guess maybe I was mistaken in seeing people throwing fireballs in the air and stuff (all crazy like), although Akuma is capable (in SF3 and SFAlpha3), but I have seen videos of him throwing like 2 in mid air, and so far I can only manage one gimpy one.
I wish I was better at these games, hah.

Shin Akuma throws 2 fireballs. regular Akuma only throws one.
Shin is only in SSF2T, SFA2 console, and SF3 3rd Strike.
and the only SF related games with huge combos are the VS. series.
Xmen vs SF, Marvel vs SF, Marvel vs Capcom, Marvel vs Capcom 2.

ALsoooo, it might be MUGEN. There are a lot of compilations featuring all the street fighter characters and they added tons of crazy moves like the one's you describe. Try doing a search for mugen on some torrent sites.
