Fine choice, although like you say 16GB is overkill
I'd also opt for a GTX 570 or HD 6970; apart from being much better value for the price (on every front; better performance per dollar/euro/krone, consumption, heat, noise), for the future they're much more manageable should you want to add a second card (just for the record, CrossFireX scales better than SLI with these things as well, in the range of 20-30% better on average).
Good PSU choice, although 750W is plenty to run even 2x580 so 850 is a bit overkill as well, but it seems money is not an issue for you
Edit: B3 revision is the revised chipset btw, early Sandy Bridge chipsets had a flaw that needed fixing. So most manufacturers now offer extra warranty with the fixed chipsets as well, to reassure their customers

Those AX series PSUs are sexy.
A little advice from my own experience. Yes a quality 750W PSU is enough for 2-way SLI with high-end cards. However, after a certain load % on the PSU, the aggressive fan controller will kick in (especially in the corsair PSUs) and that fan is going to get quite freakin loud. Even though its not overheating, it will just run at max RPM when a certain load % is reached.
So if you wanna keep your rig quiet, get higher wattage. If sound doesn't bother you, then 750W will do just fine

Why not go with a good single card ?
So you can have power/heat problems, driver incompatibilities, microstuttering etc ?
I guess it's not worth it financially, either. Games are weak, too, a gtx460 can rape everything in the near future.
