@dingo_d That looks more like a quiche than a pizza.

It's 'deep dish' pizza, and it's disgusting. The key to a good pizza is not overdoing it. If you cram too much ingredients the pizza will suck imo...

That's why the margherita with proper mozzarella is the best pizza of all time (although i usually need some meat on it).

Selfmade pizza is the best, if you know how to do it and it's not that hard. If you are making the "right" dough, you can even warm up the pizza again without turning it into a brick. Of course this is only important if you can't eat a full plate at once (nope, no sharing).

Anyone ever tried "Dr. Oetker Culinaria"?

When I first saw it, I though "who the hell does that to a pizza?", but it's really good. Hot dog with honey mustard which makes a great deal of the taste. I really like it.

That's a lot of sausage for a frozen pizza, they usually try to get away with putting the minimum amount on them. Not much cheese though.

60% flour, 40% semolina, a little bit salt, a bit more sugar, beer, yeast, a bit olive oil.

Mix dat shit properly (always try to fold the dough and don't apply too much useless pressure. use proper amount of beer, a hard dough is as shit as some slimey result). If it's a bit too sticky you can add a little bit more flour or just apply some olive oil on your hands so that the dough doesn't stick.

Let the dough rest in a cup on a warm place and cover it with a wet towel, so that it doesn't dry out.

After ~30 minutes-1 hour your dough is ready.

In the meantime you should've mixed tomato paste (triple concentrated) with a little bit of water, olive oil, garlic powder, pepper, chilli, sugar and salt. Add more water if it's not fluid enough.

Take a nice fistful of dough, and gently apply pressure from the middle to the outer parts and make it a nice flat dough. Don't squeeze the air of the little bubbles, they are what make your dough nice!

Now without wasting much time quickly apply the prepared tomato sauce. Cut nice little cherry tomatoes and Mozzarella into slices and layout on pizza. Place some basil on top and in the pre heated oven at max temperature.
(at this point you can of course add whatever you want on top but at the same time you will risk crucifixion by ixi Shocked In that case use gouda, the older the better)

Wait.

Enjoy.

+1 for this, PumpAction is the man! The recipe I use is pretty much the same...

Listen to these wise men and suddenly those frozen flip flops with fake tomato on top that discounts call "pizzas" will taste like garbage Razz

Thankfully we also have many restaurants here that still can make decent pizza and aren't too expensive, but homemade is always the best choice if you use quality ingredients Smile (laziness can be a problem though xD)

We have some nice pizeria's in town, but I like it best when we make our own. After a few tries we came to the perfect dough for us. Pump has got a really nice recipe there so try that and maybe adjust little bit here or there for your liking Smile

And if you really want to put time into it: use everything fresh, so much better with just fresh tomatoes for instance Smile

Many is an understatement Laughing

Restaurant might be an overstatement in some cases though, since there's countless of those tiny two-table places where a guy who looks like he was born in the 19th century makes bloody fantastic pizzas grinhurt

Although I must say that even in the bigger cities if you go slightly off the beaten path you find similar, small places that make proper pastas and pizzas Smile

Maybe we should have a thread for trusted places per country, where humpers can suggest good places where they have been themselves Smile I you are interested, write me a pm with a place that is great, where it is and why you suggest it, I'll maintain the main list (much like the recommended tv shows)

Hehe indeed, you know all the tricks Very Happy
We might be a crappy country when it comes to technology, infrastructures, services, and quality of our "internet" (where lines are made of spaghetti)..but when it comes to eating, we're still great Razz

@Pumpy: here in Tuscany basically the 90+% of the places are good, you need to be really unlucky to find a place that serves you bad food grinhurt

Well that sucks :<
I've never been to Cecina, but Siena has some decent places, although many of them are way too expensive because it's mainly a turist town and prices automatically levitate for no reason, without offering anything that justifies it (Italians can be pieces of shit Crying or Very sad Laughing).
As a general rule, like Paul mentioned, it is always recommended to steer away from the centre/most crowded zones and head to the small less frequented places, those rarely disappoint.

And yes! uno pizza tonno is very understandable grinhurt
We all hate pizzas with fish on top though, so I wouldn't be surprised if the guy who served you made a weird face when you ordered that Laughing

Yes, sure, but the semolina adds some crispiness to the dough and the beer seems to work well if you want a fluffy dough. Why? Smile

an alternative of PumpAction recipe if you are lazy.
get bread.
use a bit of old one (2 days).
slice it.
put a layer of ... cooking paper (?) on a tray.
pour a bit of milk in a plate.

get a slice of bread, put it briefly with both sides on milk (that's why old bread is better), after that put in on the tray, over the cooking paper. (that paper helps you to not ruin the tray when you cut it.)
repeat until the tray is full.

put

over it. but without the extra water part and garlic powder.

i slice some onion rings aswell, mushrooms, bacon. add whatever your imagination want Smile.

put it in the oven (preheated) for few minutes.
in this time, in a plate mix 2-3-4-5 eggs with grated mozzarella. (depends of the size of the tray).
pull out the tray from oven, put the mix over it.
put it back in the oven.
usually the pizza is done when the eggs are done aswell.
until then, get some garlic, crush it with salt, add sour cream over.
or get some sudden death sauce. http://extremefood.com/Sudden-Death-Sauce/ -> got a bottle 2 years ago, and i still have some.

Special edition of Ultra Death Sauce is the way to go Smile

damn the first time I used it....

I made a pizza and used the sauce instead of ketchup. (ie. coloring the bottom whole base of pizza red with it.)

I finished the pizza but I thought I would die while eating it Razz

Though, for the taste I like the Jalapeno Death Sauce. That's really delicious. But goes really fast. I used a whole bottle in a week or two.
