It's the worst windows for sure. It's like they thought "how can we possible make this paricular thing worse? Let's restrict it with X, let ut make the user do BOTH x AND y when he before just could do Z).
The fucking "let me google if for you" garbage they have instead of just taking you to where you want to go? Who the hell builds an OS like that unless you do it for shits and giggles. Some real IQ 80'ish people behind this + people not really using the OS for anything other than maybe opening Edge to surf the web.

Well, it's one of those "I read it on the internet", but I read in some forum (can't remember which) one guy recommending again the latest LTSC and advising to go at least one LTSC release back. Guy was claiming that the last one already had some of the rot baked in

There is no previous LTSC for Windows 11 as far as I know. The previous is Windows 10 IoT Enterprise 22H2, which is still getting updates as an LTSC, but for gaming, not optimal.
I am running 11 IoT Enterprise LTSC on the main machine now and a laptop and it comes really barebones. But you can install the store back, game bar, etc. Just doesn't come preloaded.
Important, there are several LTSC variants, but I am strictly speaking about IoT Enterprise, not the others.

Always the IoT Enterprise LTSC, be it Windows 10 or 11, since it removes everything from Windows that shouldn't be in Windows. I mean, in 11 the terrible design is still there, that ship has sailed, but at least it's just that.
If you don't want, you can never update it for 10 years and it will get security fixes. Or you can install the future LTSC on top and get 10 further years. For example, the last Windows 10 LTSC is still receiving security updates despite Windows 10 being declared "done" by Microsoft.
You can restore everything missing later, if you want it.

I've been using LTSC for long time, ever since they started pushing their updates in an ungodly manner. IoT Enterprise is something I discovered ~3-4 years ago when bloat started getting out of hand and basically the first day of a new Windows install became turning off crap and removing shit. I don't remember how I heard about it, but probably reddit. In the past, this wasn't necessary. I know people were building custom ISOs in the past of XP or Vista or 7, but I never felt the need to do it before. Here, Microsoft did it for us!

My workstation is on 23H2. Yesrerday I felt stupid at trying to shut down my machine. Each time I tried, the laptop would just restart itself. I even try to force shut down with the power button but no. Though this is known bug and has alteady been fixed, things like these slipping into os like Win 11 is just meme level of Q/A. Windows 11 is a mess and I would switch over to Linux or even Mac in a bit if I wasn’t into gaming. I can’t think of a single thing I would be missing from this OS.

MacOS sucks ass too, i am stuck with Macs at work. By the time they get their OS stable, the next one releases and it's a shitshow again. MacOS 26 has been a joke in terms of stability and performance.

Yup, beyond the god awful UI update, Mail constantly shows downloading emails and Spotlight regularly fails to show any files. Both issues can be resolved by Force quitting the apps in Activity Monitor. After a time they come up again.

Well, I'm not sure if there is a time limit to the grace period. Every Windows since Vista has allowed installing without a key, but some Windows versions had a grace period of 30 days and then they started shutting down every 60 min until activated. Don't know if this is true for this version.
Before you activate, you cannot "personalize" you Windows, so colors, desktop background, desktop icons, etc. are all locked.
But activation is so easy, not sure why not just activate?
Edit: Wait, you linked to the evaluation ISO. That one is 180 days from install. You can change from eval to retail, but then you need to activate.
